Tea awareness is growing. As more and more people become interested in the amazing panoply of aromas, and in the possible health benefits, so it becomes important to know more about the choice of tea to drink.
Pure teas are simply the fresh, new leaves taken from the bush and carefully dried according to age-old principles. The aromas are those locked inside the leaves and released during processing and infusion – pure tea is neither blended nor flavoured.
Tea is like wine – its quality will depend on the soil and climate, on the conditions of a particular year and on the care given during processing. Particularly good teas will hold their aroma and will improve with age.
Tea maybe chosen, in fact, using the same criteria used to choose a good wine.
Here is a selection of some of the most well-known pure teas : choice oolong tea; choice black tea.
